Kirsten from @bucknakedkitchen here with a warming recipe for BAMBOO, SQUASH, AND CHICKEN THAI RED CURRY! For mild spice: THAI KITCHEN curry paste is great (Superstore & Sobeys). For a little more kick, MAE PLOY brand is also compliant! — Bamboo, Squash, and Chicken Thai Red Curry @bucknakedkitchen Serves 3-4 — Ingredients: 1 small kabocha squash (just over 1 pound) 1 tablespoon avocado oil or extra virgin olive oil 1½ pounds skinless, bone-in chicken thighs (about 6 pieces) 1 small yellow onion, diced 4 cloves garlic, minced 1 tablespoon fresh grated ginger 1 tablespoon compliant red curry paste (adjust to taste, all curry pastes are different!) 1½ cups compliant chicken broth 1 can full-fat coconut milk 1 tablespoon coconut aminos 1 teaspoon compliant fish sauce(if you can’t find, just leave it out ½ red pepper, sliced 1 small bunch broccoli, separated into florets 1-200ml can bamboo shoots, rinsed well (found @ Sobeys) lime & cilantro, for serving — Instructions: Preheat oven to 425°F and put the kabocha squash directly on the oven rack. This will soften it a bit, so it’s easier to cut through, peel, and remove the seeds. In a large sauce pan over medium-high heat, add the oil. Season the chicken with salt and pepper, place into the pan. Brown on both sides. Once browned, remove them from the pan and set aside on a plate. Add the onion, and cook until fragrant and translucent, about 3-4 minutes. Add the garlic, ginger, and curry paste. Stir together, then add the chicken broth, coconut milk, coconut aminos, and fish sauce. Make sure everything is well combined, using a whisk to break up the curry paste if necessary. Add the chicken back to the sauce pan, cover, and bring to a simmer. While the chicken is simmering, using oven mitts, carefully remove the squash from the oven. Cut the squash in half, remove the seeds, and cut off the tough outside skin. Roughly chop, and add to the sauce pan with the red pepper, broccoli, and bamboo shoots. Stir well, cover, and cook until vegetables are softened- about 8 minutes more. I’ve been doing her hair for the past 15 years. All that time, she wore it super long and was so attached to it. Today she shed her skin and set herself free with this massive chop. Yesterday Matt and I celebrated something very exciting, it was a bit of a belated celebration but it was still important that we took time to celebrate it. As of August 17th I have been seizure free for one whole year! • If you don’t know a lot about epilepsy, a year without a seizure is amazing! I’ve been in situations where some days going an hour without an episode was a victory. I am so excited to concur this milestone, I still have a long way to go but we’re definitely making progress!
