Chunky Rocky Road⁠
⁠
✨Dry ingredients ⁠
1 cup mixed roasted nuts, chopped (I used almonds, walnuts, and pistachios)⁠
½ cup puffed rice⁠
⅓ cup coconut flakes⁠
¼ cup buckinis⁠
¼ cup goji berries⁠
2 tbsp chia seeds⁠
2 tbsp cacao nibs⁠
2 tbsp pumpkin seeds⁠
⁠
✨Wet ingredients⁠ ½ cup cacao powder⁠
½ cup of coconut oil⁠
3 tbsp smooth peanut butter⁠
2 tsp natural sweetener⁠
2 tbsp rice malt syrup⁠
⁠
✨Method:⁠
1. Combine all the dry mix ingredients in a large bowl.⁠
2. Combine all the wet mix ingredients in a saucepan and melt over low-medium heat, stirring continuously.⁠
3. Pour the melted mixture into the bowl containing dry ingredients and stir to combine.⁠
4. Pour into a lined tin and press down firmly. Top with extra chopped nuts, desiccated coconut and drizzle rice malt syrup over the top.⁠
5. Refrigerate for a few hours or until the mixture is firm.⁠
6. Chop into bars and serve! Keeps for up to 5 days in the fridge (if they last 😏)

🌟 MINI PB & J LAYER CAKE with PB Frosting and Boysenberry Drizzle🌟 Serves 8 🌟⁠

INGREDIENTS⁠
⁠
- 1 cup brown sugar⁠
- 1 ½ cups self-raising flour⁠
- pinch of salt⁠
- 1 stick of butter, cut into cubes⁠
- 2 tbsp. smooth peanut butter⁠
- 2 whole eggs⁠
- ½ cup whole milk⁠
- 3 tbsp. Pics Boysenberry Real Fruit Spread thinned with 1 tbsp. water ⁠
⁠
FROSTING⁠
- 1 ¼ cups icing sugar⁠
- 5 oz. butter⁠
- ¼ cup milk, lukewarm⁠
- 4 tbsp. Pics Smooth Peanut Butter⁠
⁠
METHOD FOR CAKE⁠
1. Preheat the oven to 350 °f. and line three 5 inch mini cake tins with baking paper.⁠
2. In a food processor, blitz sugar, flour, salt, and butter until you get a fine crumb like mix.⁠
3. Add the eggs, milk and peanut butter and blitz again to get a well-combined cake batter.⁠
4. Divide among the three tins evenly and bake for 30 minutes on fan forced or until a skewer comes out clean when inserted.⁠
5. Set aside to cool then remove from tins. ⁠
⁠
METHOD FOR FROSTING⁠
1. In a medium-size bowl, beat the butter and icing sugar until light and fluffy, approx. 15 minutes.⁠
2. Add the warm milk, peanut butter, and vanilla and continue to beat.⁠
⁠
TO ASSEMBLE⁠
1. Trim your cake layer so they sit flat on top of one another.⁠
2. Place your first layer on your serving plate and spread a good dollop Boysenberry Real Fruit Spread over the cake.⁠
3. Add another layer and repeat the process.⁠
4. Add the last layer of the cake and smooth a thin layer of the frosting all over the cake. This is the crumb coat. Transfer the cake to the fridge to allow the frosting to⁠ harden.⁠
5. To complete the icing of the cake, use the remaining frosting to cover the cake a second time. Taking care to create a smooth finish.⁠
6. Using the Boysenberry Fruit Spread, drizzle down the side of the cake all the way around.⁠
7. Slice and Serve.

- 2 tbsp. Pics Crunchy Peanut Butter⁠

Frosting⁠
- 1 ¼ cups icing sugar⁠
- 5 oz. butter⁠
- ¼ cup milk, lukewarm⁠
- 4 tbsp. Pics Smooth Peanut Butter⁠

Filling⁠
-1 tsp of Pics Boysenberry Real Fruit Spread per two cookies⁠

Method for Cookies⁠

2. In a medium-size bowl, beat the butter and two types of sugar until creamy, light and fluffy. Add the egg and vanilla, beat until well combined.⁠
3. Stir through the peanut butter then carefully fold through the flour and baking powder. You do not want to overmix.⁠
4. Once the cookies dough has loosely come together, form into a log and wrap in baking paper. Place in the refrigerator for two hours to harden.⁠
5. Remove from the fridge and slice the log into 20 cookies.⁠
6. Place each cookie on a lined baking tray and bake for 15 minutes, fan-forced or until lovely and golden. Set aside to cool. ⁠

⭐️ TOFU ALMOND SATAY NOODLES ⭐️⁣ Serves 2 ⭐️ Cook time 30 mins⁠
⁣⁠
INGREDIENTS⁣⁠
1 block firm, smoked tofu (225g)⁠
50g flat rice noodles⁠
Olive oil for cooking⁠
1 courgette⁠
150g shredded red cabbage⁠
Handful pomegranate seeds⁠
Sesame seeds to garnish⁠
Heaped Tbsp Pic’s Almond Butter⁠
Tbsp tamari sauce⁠
Heaped tsp brown rice/agave syrup⁠
Pinch grated ginger⁠
Juice from 1/3 lemon⁠
Almond milk as needed⁠
Chilli Flakes optional ⁠
⁣⁠
METHOD⁣⁠
1. Drain the excess water from your tofu block by carefully squeezing and pressing it between your hands. Pat dry with a paper towel, then slice into bite⁠ sized cubes.⁠
2. In a frying pan, add a drizzle of olive oil and bring to medium/high heat. Toss in your cubed tofu and cook these until beautifully crisp on all sides.⁠
3. Meanwhile, cook the rice noodles according to the instructions on the packet, then drain and rinse with cold water to prevent sticking.⁠
4. To make the dressing, combine the almond butter, tamari sauce, sweetener, ginger, chili if using, lemon juice and a dash of almond milk, then mix together⁠ until smooth. Add more almond milk if needed to create a pourable consistency.⁠
5. Spiralize or peel your courgette to create noodles and add these to a large mixing bowl along with the cooked noodles and red cabbage, then toss these together.⁠
6. Once your tofu is cooked, remove from the heat and pour in the sauce and stir to evenly coat the tofu and allow the sauce to thicken slightly. Add extra milk⁠ if needed.⁠
7. Pour the tofu & satay sauce over the noodles and gently toss everything together.⁠
8. Serve garnished with some fresh pomegranate and sesame seeds and⁠ enjoy! ⁠

⭐️ TOFU ALMOND SATAY NOODLES ⭐️⁣ Serves 2 ⭐️ Cook time 30 mins⁠ ⁣⁠ INGREDIENTS⁣⁠ 1 block firm, smoked tofu (225g)⁠ 50g flat rice noodles⁠ Olive oil for cooking⁠ 1 courgette⁠ 150g shredded red cabbage⁠ Handful pomegranate seeds⁠ Sesame seeds to garnish⁠ Heaped Tbsp Pic’s Almond Butter⁠ Tbsp tamari sauce⁠ Heaped tsp brown rice/agave syrup⁠ Pinch grated ginger⁠ Juice from 1/3 lemon⁠ Almond milk as needed⁠ Chilli Flakes optional ⁠ ⁣⁠ METHOD⁣⁠ 1. Drain the excess water from your tofu block by carefully squeezing and pressing it between your hands. Pat dry with a paper towel, then slice into bite⁠ sized cubes.⁠ 2. In a frying pan, add a drizzle of olive oil and bring to medium/high heat. Toss in your cubed tofu and cook these until beautifully crisp on all sides.⁠ 3. Meanwhile, cook the rice noodles according to the instructions on the packet, then drain and rinse with cold water to prevent sticking.⁠ 4. To make the dressing, combine the almond butter, tamari sauce, sweetener, ginger, chili if using, lemon juice and a dash of almond milk, then mix together⁠ until smooth. Add more almond milk if needed to create a pourable consistency.⁠ 5. Spiralize or peel your courgette to create noodles and add these to a large mixing bowl along with the cooked noodles and red cabbage, then toss these together.⁠ 6. Once your tofu is cooked, remove from the heat and pour in the sauce and stir to evenly coat the tofu and allow the sauce to thicken slightly. Add extra milk⁠ if needed.⁠ 7. Pour the tofu & satay sauce over the noodles and gently toss everything together.⁠ 8. Serve garnished with some fresh pomegranate and sesame seeds and⁠ enjoy! ⁠ ⁠ ⁠ #noodlebowl #sataynoodles #dinnersorted #zoodles ⁠
